How do we calculate the capacity of an ice cream machine?
The net capacity of an ice cream maker depends on many factors. The most important is the amount of sugar in the product. Sugar acts as an anti-freeze, so the capacity is smaller if there is less sugar in your product.
Then the ambient temperature plays an important role. Always place an ice cream machine as cool as possible. So never in the sun. This is an air-cooled machine. So no need to use cooling water. Give the machine space to "breathe". Give it at least 50 cm space at the front and the sides.
