Recipe for 720 grams of Vanilla Ice Cream

  • 500 g whole milk
  • 50 g heavy cream
  • 1 vanilla bean
  • Lemon zest
  • 3 egg yolks
  • 130 g sugar
  • A pinch of salt
  • 2 g locust bean gum

Preparation

Heat the milk, cream, vanilla pod and lemon zest. Remove the pan from the heat as soon as small bubbles appear at the edges.
Meanwhile, whisk the egg yolks with the sugar. Add the locust bean gum and a pinch of salt and continue whisking until the mixture is light and frothy.

Gradually add the warm milk and cream to the egg yolk mixture and return the pan to the heat. Stir with a spoon until the custard is thick enough to coat the back of the spoon.

The custard-gelato mixture is now ready. Remove the lemon zest and let the mixture cool completely before pouring it into the ice cream maker. Churn until smooth and creamy.
